Shrimp with fresh from the garden Swiss chard, tomatoes, and corn. The shrimp was sauteed in butter and garlic then removed from the pan while white wine was added to the pot with some reduced chicken broth. I cooked the corn in the microwave for 4 min. then cut it off the cob and added it with the chard to the pot to cook. At the end I added cut up tomatoes and added the shrimp back in to the party and stir in about 2 tblsp of butter. This is a great way to use ugly tomatoes. I always squish out, and discard the goo around the seeds and the tomato seeds, which have no nutritional or flavor value, and they only add bitterness. This dish tastes way better than it looks, and it is packed with nutritional value and has a low calorie and carb count. Low carbers....please don't leave out the corn, it only adds a small number of carbs and the little gems give a burst a sweetness in your mouth that balances with the wine and tomato. Trust me, don't change the recipe. I've tried, but this is the version that will make you smile.
