This summer salad was tasty AF. I topped a luscious mixture of spinach, chard and red leaf lettuce with roasted beets, Sweet potato, sliced strawberry, apple and tofu marinated in a glaze of molasses and teriyaki. This was an experiment gone right! I will definitely be making this again. 😍
